When I make a salsa, it often involves fruit. My go-to’s are usually mango, pineapple and papaya. All of them being acidic fruits, they blend really well with the other ingredients such as cilantro, lime and jalapeños. Only problem is they are also tropical fruits which doesn’t make them a very eco-friendly option. These days there’s a ton of tomatoes, fresh herbs and chili peppers growing in the garden. And since I have been trying really hard to buy and cook with fresh local produce I have been using tomatoes in a lot of recipes lately.
Let’s be clear, I am in no way pretending that this is going to taste like spaghetti or any type of pasta for that matter, and I wasn’t intending on creating a substitute when making this recipe.
