Chimichuri is the perfect sauce to serve with your steak, lamb or even pork. Â I served this with a rack of lamb and it was delicious! Â I made this one with mint as it pairs well with lamb but you can use any fresh herb of your choice. Â Basil, cilantro, oregano, just experiment and find your favourite!
Ingredients
- 1.5 cups fresh mint
- 1/2 cup fresh parsley,
- 1 small jalapeno, seeded
- 1 small shallot,
- 1 clove garlic
- 2 tbsp red wine vinegar
- 1/2 cup extra virgin olive oil
- 2 tbsp lemon juice freshly squeezed
- sea salt to taste
Servings: cup
Instructions
- Put all ingredients in a food processor or magic bullet and pulse until you reach desired consistency. I like mine to be fairly smooth as opposed to chunky so blend it a bit longer.
- Serve this with lamb chops or a rack of lamb!
