Beef Taco Bowls (minus the taco)

You will never satisfy your hunger eating chicken salads for lunch and fish and broccoli for dinner. Want to feel full and nourished without feeling like you need to binge on everything and anything past 8 o’clock? Eat more red meat!!! More specifically, red meat with some easy to digest carbs 🥩🥭🥕. This is one our new faves at the moment:

•local grass-fed & finished ground beef sautéed in coconut oil, salt, garlic, cumin and coriander
•quick carrot and cabbage coleslaw with some mct, coconut vinegar, salt and fresh herbs (you can also make it with apple instead of cabbage, some don’t digest raw cabbage well)
•mango & avo salsa with lots of lime juice and cilantro (or use other fruit if you prefer; peaches, apples, or whatever you have)
•shredded manchego or parmigiana cheese

We love this bowl for any time of the day, for breakfast we have eggs with it, but were also enjoy it for dinner with more beef and no eggs. Stop starving yourself and eat proper food with enough nutrients and calories, and watch magic happens ✨

As you’d expect, the quantities may not be exact, but as these are bowls and not cakes, it’s not an exact science.

Here’s what you’ll need and how to make them (for 2 people)…

INGREDIENTS:

For the meat:

-1 lb of grass-fed ground beef

-1 tbsp of coconut oil or ghee for cooking

-1 tsp of ground cumin

-1 tsp of ground coriander

-1 tsp of dried oregano

-1/2 tsp of garlic powder

-1/2 tsp of Himalayan salt

For the carrot salad:

-2 cups of grated carrots

-1 cup of grated apple or shredded purple cabbage

-1 tbsp of coconut vinegar or red wine vinegar

-1 tbsp of MCT oil

-1/4 cup of fresh parsley or dill, chopped

-salt to taste

For the salsa:

-1 large avocado, diced

-1 mango or peach, diced

-1 or 2 limes, juiced

-1/4 cup of fresh cilantro, chopped

Toppings:

-Manchego cheese or parmigiana regianno cheese

-More fresh herbs

INSTRUCTIONS:

-In a large skillet, melt coconut oil and place cumin, coriander, and garlic powders. Heat should be on medium. 

-Add the ground beef and stir to coat with seasonings. Stir frequently until meat is cooked. You can prepare the cold ingredients in the meantime.

-Once cooked, add oregano and salt. Set aside.

-Prep salsa and carrot salad while the meat is cooking.

-Build your bowls as you like and enjoy! For those of you who like more carbs, this is delicious with white rice or sweet potatoes/yams.
