Try these delicious Indian Roasted Veggies as a side to any Indian dish! Works perfectly to soak up all the extra sauce from curries if you don’t eat rice!
Ingredients
- 1 lb carrots, sliced into 1/2 inch pieces
- 1 head of cauliflower, cut into small pieces
- 2 tbsp virgin coconut oil, melted
- 3 cloves garlic minced
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp sea salt

Instructions
- Preheat oven to 400f degrees.
- Mix melted coconut oil along with spices into a large bowl. Add carrot and cauliflower pieces and toss to coat.
- Bake for about 35-40 minutes depending on your oven. Serve with Butter Chicken!
