This dressing can also be used as a chicken marinade and will make any salad or raw vegetable taste amazing!
Ingredients
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup braggs soy seasoning (or wheat free soy sauce)
- 1/4 cup toasted sesame oil
- 2 tbsp rice vinegar
- 1/2 cup virgin coconut oil, melted
- 1/2 cup honey
- 2 tbsp sambal oelek
- 1/2 cup coconut sugar
- 1-2 tbsp fresh ginger, minced (add more to liking)
- 1/4 cup natural peanut butter
- 1/4 cup fresh cilantro,
- zest of 1 lime
Servings: cups
Instructions
- In a food processor, add ingredients, starting with liquids, then sticky ingredients, then solids, adding the melted coconut oil only at the end, in little streams.
- You should obtain a very smooth texture.
- Refrigerate for up to 1 week.
Recipe Notes
Because coconut oil becomes solid in cool temperatures, you will need to soak the container in which you keep the dressing in warm water for about 10 minutes before using to allow it to become liquid again.
