Not that white potatoes were ever a huge part of my diet or my breakfast but once in a while, I need some carbs!!! When I first started to eat Paleo I experimented some occasional potato withdrawals, and quickly discovered some amazing substitutes to create new recipes with. Mashed cauliflower for example can be a great way to satisfy your mashed potato cravings (as long as you whip a ton of butter and garlic in there).
Sweet potato and yam fries have become popular in restaurants in the past few years and most people have almost forgotten about plain old regular fries. Well hash browns just another example of something you can easily sub sweet spuds for and make it even better!
Just a quick easy side dish to go with your breakfast! You can serve this with your eggs in the morning with a homemade garlic mayo! Try substituting salami or pancetta for bacon!!!
- 2 medium yams or sweet potatoes, peeled and cut into small cubes
- 1 medium white or yellow onion, diced finely
- 1 green pepper, diced finely
- 3/4 cup bacon (uncut works better), cubed or diced
- 1/2 jalapeno pepper, seeded and diced very finely
- 1/2 cup vegetable broth, I love Pacific Foods because it is gluten-free and yeast free
- 1 tbsp bacon fat or ghee (clarified butter)
- 1 tsp fresh thyme
- 2 tsp onion granules
- 1 tsp sea salt
- 1/2 tsp fine herbes
