Let’s start by making one thing clear (if it wasn’t from the title already), I am not responsible for the making of this recipe.  The making of THIS beautiful piece of pig belly shown on the picture though, was all me. With easy instructions from someone with skills in the kitchen, annnd a top quality piece of pasture-raised pork, I couldn’t really mess this up.  Truth be told, this may be the most delicious piece of pork I have ever had in my entire life.  And that is saying a lot.  I’ve had a lot of good food in this life of mine, many reallllly epic grubs.  But this. This.  I could write a love letter to this pork belly.  To put it in perspective let’s put it this way:  bacon is pretty tasty, but it tastes like a pile of poop compared to this.  You must try it.  You simply owe it to yourself and your tastebuds.

Here’s Mary’s Pork Belly Recipe for those of you who want to experience pure heaven.  It’s out of this world tender, it’s got the perfect balance of sweetness and richness, and to make it even better it was pretty darn easy to make.  Next time I make this I am absolutely doubling the portions and eating it for 2 days.  Was great with kimchi, just to add a bitter and a spicy element and hit all the notes but it can be eaten on it’s own, no questions.  Want to learn how to make kimchi?  I actually ventured myself into the kimchi making journey not too long ago and posted the recipe on my site, check it out: Kimchi Recipe.
