Blackened Fish Tacos with Chipotle Mayo

Oh fish tacos, how I love you guys.   I don’t have a massive story to tell about these, actually I may not have a story at all.  I made the mayo, made the slaw, ate half of the slaw before dinner, made pico de gallo, munched on that too, and by the time we sat down for dinner, I was full.  This happens a lot.  Especially when I spend a while prepping.  But I ate my tacos anyways, oh yes!
